The base wine (fermented wine before its turned bubbly) is turned into sparkling in a large batch in a stainless steel tank, rather than in each individual bottle. This is also called the Tank Method and is popularly used for Prosecco! Samantha's Sparkling wine took 6 weeks to finish its secondary fermentation at 48 degrees and was then aged on the lees in the tank for 8 weeks before bottling.
