Barrel Regimen - Hand-picked, chilled overnight, then crushed into concrete tanks for natural fermentation for 2 weeks. Foot-stomped two times daily, then ran off into old casks, foudres and concrete tanks, and left on lees for 7 months. lightly filtered, not fined.
Tasting Notes- The aromas are perfumed, peppery, spicy, smoky and exhibit ripe red fruit notes. The palate texture of this style of wine is supple, smooth on the entry but with enough grip to end dry and refreshing. In the mouth the texture and fineness of fruit tannin and drinkability of the wine is immediately evident.
